Hello All! Happy Hump Day! Getting warm outside. Hope the summer doesn’t come too fast. Want to share a recipe today for my Wednesday Recipe of the Month. It is for  Sweet Potato Flatbread. Very light and very good. And those sweet potatoes are soooooo good for you. I drove by a sonic yesterday and on their reader board they have sweet potato tater tots. Yum! I have got to get me some of those. I wonder if any stores have them in their frozen food section? OK the recipe. I LB. pizza dough of choice. Prepare baking sheet with parchment paper. and sprinkle cornmeal on top of parchment. Prebake dough at 350 for approx 8 min until lghtly browned. In large bowl add: 1 medium sweet potato,peeled halved and thinly sliced. 2 shallots thinly sliced, 4 oz sharp cheddar shredded, 1 Tbsp fresh thyme, 1/4 cup slivered almonds, 2 Tbsp.olive oil, salt & pepper to taste. Give it all a toss and spread onto pizza crust. Bake until crisp and golden. Approx 20 min at 425. It is wonderful and easy to make. Serve a salad on the side and you have a great dinner. Leftovers make a great lunch the next day. ( If you have any leftovers). The almonds and the shallots really compliment the sweet potatoes. Enjoy the photo. It was already dark outside so I had to use over head lighting. But you can still see it pretty good. Wonderful meal for those warm days ahead. Enjoy! The best way to serve meals is with a smile!
