Good Friday Morning to you all! Ready for the weekend? How about some great recipes to get your weekend kick started. Alot of the restaurants have flat bread pizzas on their menus, and they are great. We make our own at home. Different and lighter than a normal pizza. And with the heat out there,lighter is a good thing. We use the Stonefire Tandoori Naan Flatbread. Looks very nice. Very Authentic. Can find it around the deli counter at the super market. Includes 2 flatbreads. For each one,To prepare, I cover a cookie sheet with foil and top the foil with a metal cooling rack. I place the flat bread on the rack, brush with EVOO and sprinkle with 1 clove chopped fresh garlic. Place into a preheated oven 400 for 6-10 minutes until lightly browned. Remove from oven. Now for the toppers. Instead of a sauce I topped with thinly sliced tomatoes, Cooked shredded chicken, Sliced Fresh Mushrooms, and crumbled feta cheese, And a sprinkle of rosemary or oregano and place back into oven to just warm. Wonderful!!!! And along side of that I made Feta Stuffed Portabellas. The Mushroom tops are pretty big, so one for each of us was fine. Wipe mushrooms clean. Pull off stem and use a spoon to scrape away the grills. Brush caps with worcestershire sauce. Fill with crumbled feta cheese and sprinkle with rosemary. Bake in a preheated oven 400. for approx.10 minutes. Serve warm along side of the flat bread. Also Wonderful!!!!! Not too filling. Very Yummy. To serve the flat bread, it looks nice to do what the restaurants do. Place on a wooden cutting board and slice. Makes a nice presentation. Including photos. Have a Yummy Weekend!
