Hello All, and Happy Friday! Tonight is pool table night here at our house. Drinks and snacks. I want to share a recipe for Tex-Mex Peanuts. They go great with any drink. 1 teasp.vegetable oil. 2 cloves garlic,sliced. 1 cup unsalted dry roasted peanuts, 1 Tablesp. chili powder, 1/2 teasp. salt. Heat oil in skillet. Cook garlic in oil until golden brown. Remove with slotted spoon and discard. Now that your oil is all nice and garlic infused, stir peanuts and chili powder into skillet. Cook over medium heat about 2 minutes or longer stirring occasionally, until nuts are lightly browned. Remove to a paper towel and sprinkle with salt. YUM! Recipe is from Betty Crocker Mexican fast & flavorful. ( I use 1 Tablesp. of oil when cooking the garlic. I want more garlic infused oil for the nuts. But just a bit. You don’t want them to be too oily. I also did cashews with this recipe. Also turned out YUM! Photo shows the cashews. Now for the drink. CosmoRitas! In a glass pitcher add: 4 cups cranberry juice or a cranberry juice blend. With 2 cups Tequila. Add one whole lime, sliced. Stir and chill. Serve in martini glasses. Garnish with a lime wheel. This recipe is from Sandra Lee semi-home cooking. You can also make them ahead and place pitcher in the freezer to get a bit slushy which is very refreshing this time of year. Enjoy the photos.
