Happy Hump Day Readers! Everyone making out their shopping lists for the upcoming holiday weekend? Here is another wonderful recipe for a light dinner or appetizer.
CHICKEN DIPPERS WITH SWEET-HOT CHUTNEY
2-skinless/boneless chicken breast,1/4 teasp.garlic salt, 12 precooked bacon slices, 1/2 cup hot mango chutney, 1/2 cup salsa. Preheat oven 450. cut chicken into 24 cubes,sprinkle with garlic salt. Cut bacon strips in half.wrap bacon round each chicken piece. secure with toothpick. Lay on parchment lined cookie sheet. Bake 10-12 minutes until bacon is crisp and chicken is done. Mix chutney and salsa in a small bowl. Serve as dipping sauce on the side, at room temp or can heat a bit. This recipe is from The Best of Mr. Food.
I have made this several times. It is wonderful! Since the bacon is pre cooked don’t cut the chicken in too big of cubes. The bacon will get too done before the chicken. The sauce is a must! Hot mango chutney can be a little tricky to find. Publix has it located by the BBQ sauces and Marinades. One 9 ounce bottle is $4.39. (ouch!) But is worth it. And it is not hot. It adds maybe a little bite to the sauce if that. It has some big chunks of fruit in it that you can cut up if you want. Will make dipping easier. Hope you Enjoy!More Labor Day Recipes to come. So
