One pizza crust. Line baking sheet with parchment. Roll out dough of choice on floured surface and pre bake on bake sheet. Let cool a bit. Take some bottled Creamy Caesar salad dressing and use as the base sauce. Not too heavy. Sprinkle with a bit of garlic. Sprinkle with a bit of cheese, shredded Monterey Jack and a bit of grated Parmesan. Add some cooked shredded or chopped chicken. Sprinkle with a bit more of the two cheeses. Heat until cheese melts. 10 minutes or so. While that is going on, make salad topper. In a bowl toss together: 2 cups romaine salad mix, 2 green onions thinly sliced, and 2 plum tomatoes chopped or cherry tomatoes halved. Toss with some of the bottled salad dressing just enough to coat all the veggies. When pizza comes out of the oven, just before serving, add salad mix on top of pizza.  YUM!!!!!!!

This is a wonderful recipe for leftover chicken. It is nice and refreshing. Light. Easy. And tastes Great! Nice for the warmer weather ahead of us.

Recipe is from: Taste of Home. But I changed it a bit. I used Publix ready made pizza dough in their Bakery. 3 kinds to choose from. And used leftover chicken.IMG_5879
