SUPER BOWL PIGS IN A BLANKET

FUN WITH PUFF PASTRY

Mortadella Bites: To make 24 of these cute, different and yummy pigs in the blanket, you will need the deli to slice you 2 slices of Mortadella about 1/2 inches thick. When home you will need to cut each slice into 12 smaller pieces. Roll out one sheet of thawed puff pastry. Roll out just enough to flatten out a bit. Make 24 long slices of pastry and wrap each piece of Mortadella with a slice of pastry. Make sure the meat sticks out a bit on each end. Lay seam side down onto a parchment lined bake sheet. Brush the tops of each with egg wash. Sprinkle on top a bit of shredded cheese. Gruyere or swiss or maybe the Italian cheese blend that is shredded in the package. Bake 375 for about 20-25 minutes until golden. Platter up and serve some mustards on the side for dipping. IMG_0509I got this recipe from: Giada at Home. These are wonderful. WONDERFUL RECIPE

This is my Velveeta Crab Dip: Use 1 pound Velveeta. Cut into cubes and place in a oven proof dish. Melt gently at 170 until smooth and creamy. Add 2 cans lump crab meat. drained. ( I used bumble bee ) 1/2 cup green onion minced. 1/2 cup minced red bell pepper. 1 cup fat free sour cream. 1teaspoon crushed red pepper flakes. ( or less if your a nerd. ) I also added fresh mushrooms chopped. All of this gets mixed together gently with the melted cheese. Keep warm until ready to serve. Along side have veggies, crackers, and those cute little toasts. Enjoy!IMG_0414

SHOW REVIEW

Hello Readers. I would like to give the Food Network Show “THE KITCHEN” a BIG 2 THUMBS UP !!!!! This is such a fun show. I love it !. The new one is on Saturday’s but you can catch previous shows on other days of the week. There are some of our favorite Food Network Stars Hosting the show. They have Great Recipes, They cook inside the kitchen and also do out side grilling. There are games they play with kitchen gadgets. They have new tricks for old kitchen tools. Some shows have a guest appearance. Maybe another Food Network Host or a Cook Book Author. Or maybe someone who just enjoys cooking. They give you all kinds of ideas, how to use left overs. Maybe make into your lunch box for the next day. Just one idea after another. Great Tips, Great Recipes, Great Fun. And at the end of each show it is 5o’clock Somewhere. And they make a drink recipe. From me: 2 thumbs up !!!!! on a scale of 1-10 they get a 12 !!!!! What a fun show. Love It.

JALAPENO BITES

This is a Wonderful Snack. I want to share the recipe with all of my readers. This came from Trisha Yearwood’s cooking show. It is a different take on the regular stuffed jalapenos. Very Easy. Very Good! You can make the cheese mixture the day before:

In a large bowl add: 1 egg beaten slightly, 8 oz. softened cream cheese. ( regular, not Fat Free.) 8 oz. parmesan shredded. mix together. Fold in 4 Tbsp. minced Jalapenos seeds removed. make into a log shape. Wrap in plastic wrap and chill. ( this was the second time I made these. I had some crumbled cooked bacon also and threw it in.)IMG_7437When ready to bake. Oven at 350. Parchment line baking sheet. Cut log into 36 pieces. roll each piece into a ball. roll into dry bread crumbs of choice. Bake until golden 10-15 minutes. YUM !!!IMG_7444Enjoy !!!

Salty Snacks

If you are like me, just before dinner at our house is COCKTAIL TIME. And what goes great with that but Salty Snacks. Information from Food Network Magazine Sept. 2011 issue tells me that: There’s an upside to all those peanuts and pretzels I’ve been eating. According to a recent study, salt can lower stress and raise levels of oxytocin. a hormone known to ease social anxiety. So eat up those bar snacks.
